1 medium zucchini, grated (about 1 cup)

1 ½ cups fresh strawberries, hulled and diced

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup brown sugar, packed

½ cup vegetable oil

3 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon nutmeg (optional)

½ cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    Prepare the Zucchini and Strawberries: Grate the zucchini using the large holes of a grater. Place the grated zucchini in a clean kitchen towel, twist tightly, and squeeze to remove excess moisture. Place zucchini in a mixing bowl. Dice the strawberries and set aside.

      Mix Wet Ingredients: In a large bowl, whisk together the vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until smooth and well combined.

        Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg (if using).

          Combine Mixtures: Gradually add the dry mixture to the wet mixture, folding gently until just combined. Avoid overmixing; some lumps are okay.

            Add Zucchini and Strawberries: Gently fold in the grated zucchini, diced strawberries, and nuts (if using) until evenly distributed.

              Pour into Loaf Pan: Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

                Bake: Bake in the preheated oven for 55–65 minutes, or until a toothpick inserted in the center comes out clean.

                  Cool: Once baked, remove the bread from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
