2 medium zucchinis, sliced into 1/4-inch rounds

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably whole wheat or panko for extra crunch)

2 large eggs

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Cooking spray or olive oil for drizzling

Optional: Fresh parsley for garnish, marinara sauce for dipping

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat to prevent sticking.

    Prepare Zucchini: Rinse and dry the zucchinis, then slice them into 1/4-inch thick rounds. Pat them dry with a paper towel to remove excess moisture.

      Set Up Breading Station: In a shallow bowl, beat the eggs. In a separate bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, oregano, salt, and black pepper.

        Bread the Zucchini Slices: Dip each zucchini slice into the beaten eggs, allowing excess to drip off. Then, coat it with the Parmesan-breadcrumb mixture. Press gently to ensure an even coating. Place the breaded slices on the prepared baking sheet in a single layer.
