Zucchini Noodle Stir Fry

4 medium zucchinis, spiralized into noodles

1 cup bell peppers, thinly sliced (red, yellow, and green for color)

1 cup snap peas, trimmed

1/2 cup carrots, julienned

1 cup fresh spinach

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon olive oil

2 teaspoons sesame seeds, toasted

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional for heat)

Fresh cilantro or green onions for garnish

Instructions
 

Prepare the Zucchini Noodles: Using a spiralizer, create zucchini noodles from the zucchinis. Set aside and sprinkle lightly with salt to draw out moisture.

    Sauté Aromatics: In a large non-stick skillet or wok, heat the olive oil over medium-high heat. Add minced garlic and grated ginger; sauté for about 30 seconds until fragrant.

      Stir Fry Veggies: Add the bell peppers, snap peas, and carrots to the skillet. Stir fry for about 3-4 minutes until they become tender yet crisp.

        Add Zoodles: Gently toss in the zucchini noodles and spinach. Cook for another 2-3 minutes, stir-frying until the spinach wilts and the zucchini noodles are heated through.

          Flavor It Up: Pour in the soy sauce and sesame oil, mixing well to combine. If desired, add red pepper flakes for a kick. Season with salt and pepper to taste.
