Zucchini Mozzarella Bake with Herbs

4 medium zucchini, sliced into 1/4-inch rounds

2 cups fresh mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 cup ricotta cheese

1/4 cup fresh basil, chopped

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

1 tablespoon olive oil

1/2 teaspoon red pepper flakes (optional for a kick)

1/2 cup breadcrumbs (for topping)

Extra basil and parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: In a mixing bowl, combine the sliced zucchini with olive oil, garlic, oregano, thyme, salt, pepper, and red pepper flakes (if using). Toss to coat evenly.

      Layer the Ingredients:

        - In a greased 9x13-inch baking dish, spread half of the zucchini mixture in an even layer.

          - Dollop half of the ricotta cheese on top, followed by a layer of half of the mozzarella and Parmesan cheese. Sprinkle with half of the basil and parsley.

            - Repeat the layering with the remaining zucchini mixture, ricotta, and the remaining mozzarella and Parmesan cheese, reserving some herbs for garnish at the end.

              Add Breadcrumb Topping: In a small bowl, mix the breadcrumbs with a drizzle of olive oil and a pinch of salt and pepper. Sprinkle the breadcrumb mixture generously over the top of the final layer of cheese.

                Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 30 minutes, then remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.

                  Cool and Garnish: Once baked, remove from the oven and let it cool for 5-10 minutes. Garnish with the remaining fresh basil and parsley.
