For the Galette Dough:

1 ½ cups all-purpose flour

1 tablespoon granulated sugar

½ teaspoon salt

½ cup (1 stick) unsalted butter, cold and cut into cubes

5-6 tablespoons ice water

For the Mango Filling:

3 ripe mangoes, peeled and sliced thin

2 tablespoons brown sugar

1 tablespoon cornstarch

1 tablespoon lime juice

Zest of 1 lime

½ teaspoon ground cinnamon

Pinch of salt

For Assembly:

1 egg (for egg wash)

1 tablespoon milk (for egg wash)

Extra sugar for sprinkling

Prepare the Dough:

    - In a large mixing bowl, combine the flour, sugar, and salt. Mix well to combine.

      - Add the cold butter cubes and use a pastry cutter or your fingertips to blend until the mixture resembles coarse crumbs.

        - Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together but is not sticky. You may not need all the water.

          - Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 1 hour.

            Make the Mango Filling:

              - In a medium bowl, gently toss the thinly sliced mangoes with brown sugar, cornstarch, lime juice, lime zest, cinnamon, and a pinch of salt. Set aside to let the flavors meld while the dough chills.

                Roll Out the Dough:

                  - Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

                    - On a lightly floured surface, roll out the chilled dough into a rough circle about 12 inches in diameter. It doesn't have to be perfect!

                      Assemble the Galette:

                        - Carefully transfer the rolled-out dough onto the prepared baking sheet.

                          - Spoon the mango filling into the center of the dough, leaving about a 2-inch border around the edges.

                            - Gently fold the edges of the dough over the filling, pleating as you go, to create a rustic edge.

                              Add Egg Wash:

                                - In a small bowl, whisk together the egg and milk to make an egg wash. Brush the edges of the galette with the egg wash.

                                  - Sprinkle the pleated edges and the mango filling with extra sugar for added sweetness and a crunchy texture.

                                    Bake:

                                      - Bake in the preheated oven for 30-35 minutes or until the crust is golden brown and the filling is bubbly.

                                        Serve:

                                          - Let the galette cool for a few minutes before slicing. Serve warm or at room temperature, potentially with a scoop of vanilla ice cream or a dollop of whipped cream for a delightful ending.
