2 cups watermelon, pureed (seedless)

1/4 cup soy sauce

3 tablespoons honey

2 tablespoons rice vinegar

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons cold water

Salt and pepper to taste

2 tablespoons chopped green onions (for garnish)

2 tablespoons sesame seeds (for garnish)

Marinate the Beef: In a large bowl, combine the beef cubes, soy sauce, honey, rice vinegar, minced garlic, and ginger. Mix well, cover, and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.
