4 large whole wheat tortillas

1 cup grated mozzarella cheese

1 cup mixed bell peppers (red, yellow, green) - sliced

1 cup fresh spinach leaves

½ cup grated carrots

½ cup cucumber - thinly sliced

½ avocado - sliced

¼ cup red onion - thinly sliced

1 teaspoon olive oil

Salt and pepper to taste

1 teaspoon Italian seasoning (optional)

½ cup hummus or tzatziki for spreading

Prep the Veggies: In a large mixing bowl, combine the sliced bell peppers, spinach, grated carrots, cucumber, and red onion. Drizzle with olive oil, season with salt, pepper, and Italian seasoning if desired. Toss to coat the veggies evenly.

    Assemble the Wraps: Take a whole wheat tortilla and spread a generous layer of hummus or tzatziki over it, leaving about an inch around the edges. Layer with a handful of the seasoned veggie mixture, a few slices of avocado, and a sprinkle of grated mozzarella cheese.

      Wrap It Up: Starting from one end, tightly roll the tortilla over the filling to create a wrap. Fold in the sides as you roll to secure the filling inside. Repeat for the remaining tortillas.

        Toast the Wraps (Optional): Preheat a skillet over medium heat. Once hot, place the wraps seam side down and toast them for about 2-3 minutes on each side or until they are golden brown and the cheese is melted.

          Serve: Remove from the skillet and let cool for a moment. Cut the wraps in half diagonally and serve immediately with extra hummus or tzatziki on the side for dipping.
