2 large ripe tomatoes, diced

1 large cucumber, diced

1 small red onion, finely chopped

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Optional: 1 avocado, diced

Start by prepping all your vegetables: dice the tomatoes and cucumber, finely chop the red onion, and the fresh herbs (parsley and mint). If you’re using avocado, dice that as well.

    In a large mixing bowl, combine the diced tomatoes, cucumber, red onion, crumbled feta cheese, parsley, and mint. If you are including avocado, gently fold it in at this stage.

      In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Adjust the seasoning according to taste.

        Pour the dressing over the tomato, cucumber, and feta mixture, then gently toss everything together until well combined.

          Let the mixture sit for about 10-15 minutes to allow the flavors to meld together.
