4 large eggs

1 cup cherry tomatoes, halved

1/2 cup fresh basil leaves, chopped

1/4 cup feta cheese, crumbled (optional)

Salt and pepper, to taste

4 whole wheat tortillas or wraps

2 tbsp olive oil

1 tbsp balsamic vinegar

1 avocado, sliced (for serving)

Instructions
 

Prep the Filling: In a mixing bowl, whisk together the eggs with a pinch of salt and pepper. Stir in the chopped fresh basil and feta cheese if using. Set aside.

    Cook the Tomatoes: Heat olive oil in a non-stick skillet over medium heat. Add the halved cherry tomatoes and sauté for about 2-3 minutes until they soften and start to burst. Drizzle the balsamic vinegar into the pan, stirring to coat the tomatoes, and remove from heat.

      Scramble the Eggs: In the same skillet (no need to wash it out), pour in the egg mixture. Gently stir with a spatula as they start to set, cooking for about 3-5 minutes until they are fluffy but still slightly creamy.

        Combine: Add the sautéed tomatoes to the scrambled eggs, folding them in gently to combine without overcooking the eggs.

          Assemble the Wraps: Warm the whole wheat tortillas slightly in another pan or microwave to make them pliable. Spoon an equal portion of the egg and tomato mixture onto the center of each tortilla. Fold the sides over the filling, then roll from the bottom up to create a wrap.
