1 lb chicken breast, diced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup brown rice or quinoa, cooked

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup cherry tomatoes, diced

1 avocado, diced

½ cup red onion, diced

1 lime, juiced

½ cup fresh cilantro, chopped

1 cup shredded cheddar cheese

Salsa and sour cream, for topping (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine the diced chicken breast with olive oil, chili powder, cumin, smoked paprika, salt, and pepper. Let it marinate for at least 20 minutes to absorb the flavors. For best results, marinate longer in the refrigerator.

    Cook the Rice/Quinoa: Prepare the brown rice or quinoa according to package instructions. After cooking, fluff with a fork and set aside.

      Cook the Chicken: In a large skillet over medium-high heat, add the marinated chicken. Cook for about 7-10 minutes, stirring occasionally, until the chicken is thoroughly cooked and no longer pink. It should reach an internal temperature of 165°F.
