Taco-Stuffed Sweet Potatoes for Family Dinner

4 medium sweet potatoes

1 lb ground turkey (or beef, or plant-based alternative)

1 tsp chili powder

1 tsp cumin

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

1 cup black beans, drained and rinsed

1 cup corn (canned or frozen)

1 medium tomato, diced

1 avocado, diced

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup Greek yogurt or sour cream

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare Sweet Potatoes: Wash and dry the sweet potatoes thoroughly. Poke each one with a fork a few times, then wrap them in aluminum foil. Place them directly on the oven rack and bake for about 45-60 minutes, or until they’re tender and easily pierced with a fork.

      Cook the Meat: While the sweet potatoes are baking, heat a large skillet over medium heat. Add the ground turkey and cook until browned, breaking it apart as it cooks (about 6-8 minutes). Drain any excess fat.

        Season the Meat: Add chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper to the skillet. Stir well to coat the meat with the spices. Continue to cook for an additional 2-3 minutes.

          Add Beans and Corn: Stir in the black beans and corn. Cook for another 3-5 minutes until everything is heated through. Remove from heat.

            Prepare Sweet Potatoes: Once the sweet potatoes are cooked, remove them from the oven and let cool for a few minutes. Carefully unwrap the foil and slice each potato down the middle, creating a pocket for the filling.

              Stuff the Sweet Potatoes: Spoon the taco meat mixture generously into each sweet potato pocket. Top with diced tomatoes, avocado, and shredded cheese.
