Sweet & Spicy Roasted Squash Fajitas

1 medium butternut squash (peeled, seeds removed, and cut into thin strips)

1 large red bell pepper (sliced)

1 large yellow bell pepper (sliced)

1 medium red onion (sliced)

3 tablespoons olive oil

2 tablespoons brown sugar

1 tablespoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper to taste

8 small flour or corn tortillas

Fresh cilantro (for garnish)

Lime wedges (for serving)

Optional toppings: avocado slices, crumbled feta or cotija cheese, and sour cream

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Vegetables: In a large bowl, combine the butternut squash, red bell pepper, yellow bell pepper, and red onion.

      Seasoning: In a small bowl, whisk together the olive oil, brown sugar, chili powder, cumin, smoked paprika, cayenne pepper, and a pinch of salt and pepper. Pour this mixture over the vegetables and toss well to ensure everything is evenly coated.

        Roast the Vegetables: Spread the seasoned vegetables in a single layer on a large baking sheet. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the squash is tender and slightly caramelized.

          Warm the Tortillas: While the vegetables are roasting, wrap the tortillas in aluminum foil and place them in the oven during the last 5-10 minutes of roasting to warm them through.

            Assemble the Fajitas: Once the vegetables are roasted, remove them from the oven. Take a warmed tortilla and fill it with a generous amount of the roasted squash and bell pepper mixture. Add your choice of optional toppings like avocado slices, crumbled cheese, or sour cream.

              Garnish and Serve: Garnish with fresh cilantro and serve with lime wedges on the side for squeezing over the fajitas.
