2 boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup fresh pineapple chunks (or canned pineapple in juice)

1 bell pepper (red or green), diced

1 cup snap peas, trimmed

1 medium onion, diced

2 tablespoons vegetable oil

1/4 cup soy sauce

1/4 cup rice vinegar

1/4 cup ketchup

1/4 cup brown sugar

1 tablespoon cornstarch

2 tablespoons water

Salt and pepper to taste

Cooked rice, for serving

Chopped green onions and sesame seeds, for garnish

Prepare the Chicken: Season the chicken pieces with salt and pepper. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the chicken and cook for about 5-7 minutes, or until golden brown and fully cooked. Remove from the skillet and set aside.

    Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the onion, diced bell pepper, and snap peas. Sauté for about 3-4 minutes until the vegetables are tender-crisp.

      Make the Sauce: While the vegetables are cooking, whisk together the soy sauce, rice vinegar, ketchup, brown sugar, cornstarch, and water in a bowl until smooth.
