Sweet Raspberry Chia Jam Bars

For the Chia Jam:

2 cups fresh or frozen raspberries

1/4 cup maple syrup (adjust based on sweet preference)

2 tablespoons chia seeds

1 tablespoon lemon juice

1/2 teaspoon vanilla extract

For the Oat Base:

1 1/2 cups rolled oats

1/2 cup almond flour (or whole wheat flour)

1/4 cup coconut oil, melted

1/4 cup maple syrup or honey

1 teaspoon vanilla extract

1/2 teaspoon salt

1/2 teaspoon baking powder

Optional: 1/2 teaspoon cinnamon for extra flavor

Instructions
 

Make the Chia Jam:

    - In a medium saucepan over medium heat, combine the raspberries and maple syrup. Cook until the raspberries start to break down, about 5-7 minutes. Stir occasionally.

      - Mash the raspberries with a fork or potato masher, leaving some chunks for texture.

        - Stir in the chia seeds, lemon juice, and vanilla extract. Cook for another 2-3 minutes until the mixture thickens. Remove from heat and let it cool.

          Prepare the Oat Base:

            - Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

              - In a large mixing bowl, combine rolled oats, almond flour, melted coconut oil, maple syrup, vanilla extract, salt, and baking powder. If using, add cinnamon for added flavor.

                - Mix until everything is well combined. The mixture should be crumbly yet hold together when pressed.

                  Assemble the Bars:

                    - Press about two-thirds of the oat mixture down into the prepared baking dish to create an even base layer.

                      - Spread the cooled chia jam over the base layer, making sure it covers evenly.

                        - Crumble the remaining oat mixture on top of the jam layer.

                          Bake:

                            - Bake in the preheated oven for 25-30 minutes or until the top is golden brown.

                              - Once done, remove from the oven and let it cool in the baking dish for about 15 minutes before lifting it out using the parchment paper.

                                Cut and Serve:

                                  - Allow the bars to cool completely on a wire rack before cutting them into squares or bars.
