Sweet Potato Turkey Chili

1 pound ground turkey

2 medium sweet potatoes, peeled and diced

1 large onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) diced tomatoes with green chilies

2 cups low-sodium chicken broth

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust for spice preference)

Salt and black pepper to taste

1 tablespoon olive oil

Fresh cilantro for garnish

Optional: avocado and shredded cheese for topping

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

    Brown the Turkey: Add the ground turkey to the pot. Use a wooden spoon to break it up and cook until browned, about 5-7 minutes.

      Add Sweet Potatoes and Spices: Stir in the diced sweet potatoes, chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper. Mix well to coat the sweet potatoes and turkey with the spices.

        Combine the Remaining Ingredients: Pour in the diced tomatoes and chicken broth, then add the black beans. Stir well to combine all the ingredients.

          Simmer: Bring the chili to a boil, then reduce the heat to low. Cover and let it simmer for 25-30 minutes, or until the sweet potatoes are tender and the flavors meld together.

            Taste and Adjust: After 30 minutes, taste the chili and adjust the seasoning if necessary. If you prefer a thinner consistency, add more chicken broth.

              Serve: Ladle the chili into bowls and garnish with fresh cilantro. Add avocado slices and shredded cheese on top if desired.
