2 medium sweet potatoes, peeled and diced

4 large eggs

1/2 cup black beans, rinsed and drained

1/2 cup diced bell pepper (combine red and green for color)

1/4 cup diced red onion

1 avocado, sliced

1/4 cup fresh cilantro, chopped

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

6 small corn or flour tortillas

Olive oil for cooking

Lime wedges for serving

Roast the Sweet Potatoes: Preheat your oven to 425°F (220°C). Toss the diced sweet potatoes in a bowl with olive oil, cumin, smoked paprika, salt, and pepper. Spread them out evenly on a baking sheet and roast for 25-30 minutes, or until they are tender and slightly caramelized, tossing halfway through for even cooking.

    Sauté the Vegetables: While the sweet potatoes are roasting, heat a small skillet over medium heat and add a drizzle of olive oil. Once hot, add the diced red onion and bell pepper. Sauté for about 5-7 minutes, until softened and slightly caramelized. Set aside.

      Scramble the Eggs: In a medium bowl, whisk the eggs with a pinch of salt and pepper. In the same skillet, reduce the heat to low, add a little more olive oil if necessary, and pour in the eggs. Stir gently until they begin to set, then fold in the cooked black beans and sautéed vegetables. Cook until the eggs are fully scrambled but still fluffy, about 3-4 minutes.

        Assemble the Tacos: Warm the tortillas in a dry skillet or microwave. Layer a generous scoop of roasted sweet potatoes, followed by the egg mixture, and top with avocado slices and fresh cilantro.
