Sweet Potato Crust Breakfast Pizza

For the Sweet Potato Crust:

2 medium sweet potatoes, peeled and cubed

1 cup almond flour

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

2 large eggs (or flax eggs for a vegan option)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

For the Toppings:

1 cup baby spinach

1/2 bell pepper, diced

1/2 cup cherry tomatoes, halved

4 large eggs

1/2 avocado, sliced

Fresh herbs (such as basil or parsley) for garnish

Salt and pepper to taste

Olive oil for drizzling

Instructions
 

Prepare the Sweet Potato Crust:

    - Preheat your oven to 425°F (220°C).

      - Boil the cubed sweet potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and allow to cool slightly.

        - In a large bowl, mash the sweet potatoes until smooth. Add the almond flour, Parmesan cheese, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.

          - Spread the mixture onto a parchment-lined baking sheet, forming a round pizza shape about 1/2 inch thick. Use the back of a spatula to smooth out the surface.

            Bake the Crust:

              - Bake the crust in the preheated oven for 20-25 minutes, or until the edges are golden brown and crispy.

                Prepare the Toppings:

                  - While the crust is baking, sauté the spinach and bell pepper in a bit of olive oil over medium heat until wilted, about 3-4 minutes. Set aside.

                    Assemble the Pizza:

                      - Once the crust is done, remove it from the oven and evenly distribute the sautéed spinach and peppers over the base. Arrange the cherry tomatoes on top.

                        - Carefully crack the eggs onto the pizza, spacing them evenly. Sprinkle with additional salt and pepper.
