2 cups rolled oats

1/2 cup almond butter (or any nut butter of your choice)

1/3 cup honey (or maple syrup for a vegan option)

1/4 cup shredded coconut (unsweetened)

1/2 cup mini chocolate chips (or chopped dark chocolate)

1/4 cup chopped nuts (such as almonds, pecans, or walnuts)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

Instructions
 

In a large mixing bowl, combine the rolled oats, shredded coconut, mini chocolate chips, and chopped nuts. Stir until evenly mixed.

    In a separate smaller bowl, whisk together the almond butter, honey (or maple syrup), vanilla extract, and salt until smooth and well combined.

      Pour the wet mixture over the dry ingredients in the large bowl. Use a spatula or wooden spoon to mix everything together until the oats, nuts, and chocolate are fully coated.

        Line a baking sheet with parchment paper. Scoop tablespoon-sized portions of the mixture and place them on the baking sheet. Gently press each cluster together to help them hold their shape.
