On those mornings, my grandmother’s kitchen would come alive with the comforting scent of freshly baked goods. One of my fondest memories is of her Sweet Maple Oat Muffins, which would warm our hearts and fill our bellies. Often, we would enjoy them with a cup of steaming coffee or a splash of cold milk, creating a perfect start to the day.

Sweet Maple Oat Muffins

Ingredients
  

1 cup rolled oats

1 cup milk (or a plant-based alternative)

1/2 cup maple syrup

1/4 cup vegetable oil (or melted coconut oil)

1 large egg

1 teaspoon vanilla extract

1 cup all-purpose flour (or whole wheat flour)

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1/4 cup chopped walnuts or pecans (optional)

1/2 cup raisins or dried cranberries (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or sprinkle it with non-stick spray.

    Soak the Oats: In a medium bowl, combine the rolled oats and milk. Allow them to soak for about 15–20 minutes. This will soften the oats and give the muffins a hearty texture.

      Mix Wet Ingredients: In a separate large bowl, whisk together the maple syrup, vegetable oil, egg, and vanilla extract until smooth and well combined.

        Combine: Add the soaked oats to the wet ingredients and stir until just combined.

          Sift Dry Ingredients: In another bowl, sift together the flour, baking powder, salt, and cinnamon. If using nuts or dried fruits, gently fold them into the dry mix.

            Combine All Elements: Gradually add the dry mixture to the wet mixture. Stir until all ingredients are just combined. Avoid overmixing to keep the muffins light and fluffy.

              Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 2/3 full.

                Bake: Bake in the preheated oven for about 18–20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                  Cool: Remove the muffins from the oven and let them cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
