4 cups fresh sweet corn kernels (or frozen if not in season)

1 large onion, diced

2 cloves garlic, minced

2 medium potatoes, peeled and diced

1 red bell pepper, diced

1 carrot, diced

4 cups vegetable broth

1 cup whole milk (or almond milk for a vegan option)

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

2 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics:

    - In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add Vegetables:

        - Toss in the diced red bell pepper, carrot, and potatoes. Cook for about 4-5 minutes until they start to soften.

          Combine with Broth:

            - Add the corn kernels, vegetable broth, thyme, and smoked paprika. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes until the potatoes are tender.

              Blend for Creaminess:

                - Using an immersion blender, puree about half of the chowder for a creamy texture while leaving some chunks for heartiness. If using a regular blender, allow the chowder to cool slightly before blending in batches.

                  Finish with Milk:

                    - Stir in the whole milk (or almond milk) and return the chowder to medium heat. Allow it to simmer for another 5 minutes, seasoning with salt and pepper to taste.

                      Serve and Garnish:

                        - Ladle the chowder into bowls and sprinkle with chopped green onions and parsley for a fresh touch. Enjoy warm!
