Sweet Corn & Cheddar Stuffed Zucchini

Ingredients
  

4 medium zucchinis

1 cup sweet corn (fresh or frozen)

1 cup shredded sharp cheddar cheese

1/2 cup cooked quinoa (or rice)

1/2 small onion, finely chopped

2 cloves garlic, minced

1/4 cup fresh cilantro, chopped (or parsley)

1 tsp ground cumin

1/2 tsp smoked paprika

Salt and pepper, to taste

1 tbsp olive oil

1/4 cup breadcrumbs (optional, for topping)

Extra cheddar cheese for topping (optional)

Instructions
 

Prepare the Zucchini:

    Preheat the oven to 375°F (190°C). Slice the zucchinis in half lengthwise and scoop out the seeds to create a hollow space for the filling. Set the hollowed zucchinis aside on a baking sheet.

      Cook the Filling:

        In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Next, stir in the minced garlic and cook for an additional 1 minute, until fragrant.

          Combine Ingredients:

            In a large bowl, combine the cooked onion and garlic with the sweet corn, cooked quinoa, shredded cheddar cheese, chopped cilantro, ground cumin, smoked paprika, salt, and pepper. Mix until everything is evenly distributed.

              Stuff the Zucchini:

                Generously spoon the corn and cheese mixture into each zucchini half, pressing down slightly to pack it in well. If desired, top with additional shredded cheese and breadcrumbs for a crispy topping.

                  Bake the Zucchini:

                    Place the stuffed zucchinis in the preheated oven and bake for about 25-30 minutes, or until the zucchinis are tender and the tops are golden brown.

                      Serve:
