Ingredients

1 cup unsweetened shredded coconut

1 cup almond flour

1/2 cup maple syrup (or honey)

1/4 cup almond butter

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 teaspoon ground cinnamon

1/4 cup sliced almonds (for rolling)

Optional: 1/4 cup dark chocolate chips (for drizzling)

Instructions

In a large mixing bowl, combine the shredded coconut, almond flour, maple syrup, almond butter, vanilla extract, sea salt, and ground cinnamon.

Stir the mixture until it is well combined. The texture should be slightly sticky but manageable. If it’s too dry, add a little more almond butter or maple syrup.

Once combined, use your hands to form small balls, roughly the size of a tablespoon. Place the formed balls onto a parchment-lined baking sheet.

After all the balls are formed, roll each one in sliced almonds to coat the outside for a crunchy texture.

Optional: If you want to add a chocolate drizzle, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals until smooth. Drizzle over the almond-coated balls using a fork.

Place the baking sheet in the refrigerator and let the balls chill for at least 30 minutes to firm up.

Once set, serve them chilled or at room temperature. Enjoy your sweet, tropical treat!
