4 large bell peppers (any color)

1 lb ground turkey

1 cup cooked quinoa (or rice)

1 small onion, diced

2 cloves garlic, minced

1 cup canned diced tomatoes (with juices)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

1 cup shredded mozzarella cheese (or cheese of choice)

¼ cup fresh parsley, chopped (for garnish)

Olive oil for cooking

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers:

      - Slice the tops off the bell peppers and remove the seeds and membranes. Drizzle the outsides lightly with olive oil and place them in a baking dish, cut-side up.

        Cook the Filling:

          - In a large skillet over medium heat, warm a splash of olive oil. Sauté the diced onion until translucent, about 3-4 minutes.

            - Add minced garlic and cook for another minute until fragrant.

              - Stir in ground turkey and cook until browned and crumbly, about 5-7 minutes.

                Combine Ingredients:

                  - Once the turkey is cooked, mix in the cooked quinoa (or rice), diced tomatoes, cumin, smoked paprika, oregano, salt, and pepper. Allow it to simmer for about 5 minutes to combine the flavors.

                    Stuff the Peppers:

                      - Carefully spoon the turkey mixture into each bell pepper until they’re generously filled. Top each filled pepper with shredded mozzarella cheese.

                        Bake the Peppers:

                          - Cover the baking dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
