Strawberry Cheesecake Parfaits

2 cups fresh strawberries, hulled and sliced

2 tablespoons sugar (for strawberries)

1 cup cream cheese, softened

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 1/2 cups graham cracker crumbs

3 tablespoons unsalted butter, melted

Fresh mint leaves, for garnish (optional)

Instructions
 

Prepare Strawberries: In a medium bowl, combine the sliced strawberries and 2 tablespoons of sugar. Toss to coat and let sit for about 15 minutes to macerate, allowing the strawberries to release their juices.

    Make Cheesecake Mixture: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the heavy whipping cream, powdered sugar, and vanilla extract. Beat until well combined and it reaches a fluffy consistency, about 3-5 minutes.

      Prepare Crust: In another bowl, mix the graham cracker crumbs with the melted butter until the crumbs are evenly coated.

        Assemble Parfaits: In serving glasses or bowls, start with a layer of the graham cracker mixture (about 2 tablespoons). Next, add a generous layer of the cheesecake mixture (about 1/4 cup). Then, add a layer of the macerated strawberries. Repeat the layers until the glasses are full, finishing with a layer of cheesecake on top, garnished with a few slices of strawberry and a mint leaf if desired.

          Chill: Cover each parfait with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld and the parfaits to set.
