Sticky Glazed Chicken and Sweet Potato Bake

4 chicken thighs (bone-in, skin-on)

2 large sweet potatoes, peeled and cubed

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon black pepper

2 teaspoons smoked paprika

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper (optional for heat)

1/2 cup honey

1/4 cup soy sauce

2 tablespoons rice vinegar

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 tablespoon sesame oil

1/4 cup chopped green onions (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: In a large mixing bowl, toss the cubed sweet potatoes with olive oil, salt, black pepper, smoked paprika, garlic powder, and cayenne pepper if using. Ensure they are evenly coated.

      Arrange Sweet Potatoes: Spread the seasoned sweet potatoes evenly in a large baking dish.

        Prepare Chicken: Pat the chicken thighs dry with paper towels. Season each piece generously with salt, black pepper, and smoked paprika.

          Make the Glaze: In a small saucepan over medium heat, combine honey, soy sauce, rice vinegar, minced garlic, minced ginger, and sesame oil. Stir and bring to a simmer, allowing it to thicken slightly, about 3-5 minutes. Remove from heat.

            Combine Chicken and Sweet Potatoes: Nestle the seasoned chicken thighs on top of the sweet potatoes in the baking dish. Pour half of the sticky glaze over the chicken, ensuring it's well coated.

              Bake the Dish: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes.

                Add the Glaze: After 25 minutes, remove the foil and baste the chicken with more glaze. Return to the oven uncovered for an additional 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and the sweet potatoes are tender.
