1 lb (450g) ground beef (or chicken)

1/2 cup breadcrumbs

1/4 cup finely chopped onion

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon soy sauce

1 tablespoon sesame oil

1 large egg

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon chopped fresh cilantro (optional)

For the Sticky Ginger Glaze:

1/4 cup soy sauce

1/4 cup honey

1 tablespoon fresh ginger, grated

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 teaspoon red pepper flakes (adjust based on heat preference)

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

For the Rice:

1 cup jasmine rice

2 cups water

1 teaspoon salt

For Garnish:

Chopped green onions

Sesame seeds

Additional cilantro leaves

Prepare the Meatballs:

    - In a mixing bowl, combine ground beef, breadcrumbs, chopped onion, minced garlic, grated ginger, soy sauce, sesame oil, egg, salt, black pepper, and cilantro if using.

      - Mix thoroughly until well combined. Shape the mixture into small meatballs, about 1 inch in diameter.

        Cook the Meatballs:

          - Heat a large skillet over medium heat and add a drizzle of sesame oil.

            - Add the meatballs in batches, being careful not to overcrowd the pan, and cook until browned on all sides, approximately 5-7 minutes. Once cooked, remove the meatballs from the skillet and set aside.

              Make the Sticky Ginger Glaze:

                - In the same skillet, add the soy sauce, honey, grated ginger, rice vinegar, and red pepper flakes. Bring the mixture to a simmer over medium heat.

                            - Once boiling, reduce to a low simmer, cover, and cook for 15 minutes. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

                              Serve:

                                - Plate the fluffy jasmine rice and top with the sticky ginger glazed meatballs. Drizzle any remaining glaze from the skillet over the top.
