1/2 cup milk (or a milk alternative)

1 cup diced bell peppers (any color)

1/2 cup chopped red onion

1 cup cooked and crumbled spicy sausage (or a plant-based alternative)

1/2 cup shredded cheese (cheddar or pepper jack work well)

1-2 jalapeños, finely chopped (adjust based on spice preference)

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and black pepper to taste

Fresh cilantro or parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or line it with muffin liners.

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs and milk until well combined.
