Spicy Chickpea & Spinach Stew

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

4 cups fresh spinach, washed

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 can (14 oz) diced tomatoes

1 cup vegetable broth

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

2 tablespoons olive oil

Fresh cilantro or parsley for garnish (optional)

Juice of 1 lemon

Instructions
 

Heat the Olive Oil: In a large pot or Dutch oven, heat the olive oil over medium heat.

    Sauté the Veggies: Add the diced onion and red bell pepper. Sauté for about 5 minutes until the onion becomes translucent. Add the minced garlic and cook for another 1-2 minutes until fragrant.

      Add Spices: Stir in the ground cumin, smoked paprika, cayenne pepper, salt, and black pepper. Cook for another minute to toast the spices.

        Combine Chickpeas and Tomatoes: Add the drained chickpeas and the can of diced tomatoes (with their juices) to the pot. Stir well to combine.

          Pour in Broth: Add the vegetable broth and bring the mixture to a gentle simmer.

            Add Spinach: Once simmering, add the fresh spinach to the pot. Stir and cook for about 5-7 minutes until the spinach has wilted down.

              Finish with Lemon Juice: Remove the pot from heat and stir in the lemon juice. Adjust seasoning if needed.

                Serve Warm: Ladle the stew into bowls and garnish with fresh cilantro or parsley if desired.
