2 cups rolled oats

1 cup raw pumpkin seeds (pepitas)

1 cup nuts (such as almonds and pecans), roughly chopped

1/2 cup unsweetened coconut flakes

1/2 cup maple syrup (or honey)

1/4 cup coconut oil, melted

2 teaspoons pumpkin pie spice

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup dried cranberries or raisins

1/2 cup dark chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C). Line a large baking sheet with parchment paper for easy clean-up.

    Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, pumpkin seeds, chopped nuts, coconut flakes, pumpkin pie spice, ground cinnamon, and salt. Stir until all the dry ingredients are evenly mixed.

      Combine Wet Ingredients: In a separate bowl, whisk together the melted coconut oil and maple syrup until well combined.

        Combine Everything: Pour the wet mixture over the dry ingredients. Stir thoroughly until all the dry ingredients are evenly coated with the syrup and oil mixture.

          Spread on Baking Sheet: Spread the granola mixture evenly onto the prepared baking sheet. Use a spatula to press it down slightly for clumping.

            Bake: Bake in the preheated oven for 20-25 minutes, turning the granola every 10 minutes to ensure even baking. Keep an eye on it to avoid burning; it should turn a nice golden brown.

              Add Dried Fruit and Chocolate: Once done, remove the granola from the oven and let it cool completely on the baking sheet. Once cooled, mix in the dried cranberries or raisins, and if using, the dark chocolate chips.

                Store: Transfer the granola to an airtight container for storage. It can last up to two weeks at room temperature.
