Southwest Chicken and Veggie Foil Packs

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup bell peppers (red, yellow, or green), sliced

1 cup zucchini, sliced

1 cup corn (fresh, frozen, or canned)

1 cup black beans, drained and rinsed

2 tablespoons olive oil

1 tablespoon taco seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1 lime, juiced

Fresh cilantro, chopped (for garnish)

Shredded cheese (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) or prepare a grill for medium-high heat.

    Prepare the Chicken and Veggies: In a large mixing bowl, combine the chicken, bell peppers, zucchini, corn, and black beans.

      Season the Mixture: Drizzle the olive oil over the chicken and vegetables. Sprinkle in taco seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper. Squeeze in the lime juice and toss everything together until well-coated.

        Prepare the Foil Packs: Cut large pieces of aluminum foil, about 12x18 inches. Divide the chicken and veggie mixture evenly among the foil sheets, placing them in the center. Carefully fold up the sides of the foil to create packets, sealing them tightly.

          Cook the Foil Packs: Place the foil packets on a baking sheet and bake in the oven for 20-25 minutes, or grill them for the same time. Cook until the chicken is no longer pink and the vegetables are tender.

            Check for Doneness: Carefully remove the packs from the oven or grill (watch out for steam when opening). Ensure the chicken reaches an internal temperature of 165°F (74°C).

              Serve and Garnish: Carefully open each foil pack and garnish with fresh cilantro and shredded cheese if desired. Serve with additional lime wedges on the side.
