Slow Cooker Mac and Cheese with Bacon

1 pound elbow macaroni

4 cups sharp cheddar cheese, shredded

1 cup smoked gouda cheese, shredded

1 cup cream cheese, cubed

4 cups chicken broth

1 cup whole milk

1/2 cup sour cream

6 strips of bacon, cooked and crumbled

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Dijon mustard

1/2 teaspoon black pepper

1/2 teaspoon salt

1/2 cup breadcrumbs (optional, for topping)

Instructions
 

Prepare the Bacon: Cook the strips of bacon in a skillet over medium heat until crispy. Drain on paper towels, then crumble and set aside.

    Combine Ingredients: In the slow cooker, add the uncooked elbow macaroni, shredded sharp cheddar, smoked gouda, cream cheese, and cooked and crumbled bacon.

      Mix Liquids: In a separate bowl, whisk together the chicken broth, whole milk, sour cream, garlic powder, onion powder, Dijon mustard, black pepper, and salt. Pour this liquid mixture over the macaroni and cheese mixture in the slow cooker.

        Stir Well: Gently mix all the ingredients to ensure the macaroni is well coated with the cheese and liquid.

          Cook: Cover the slow cooker and set it on low for 2 to 3 hours, or until the pasta is tender and the cheese is melted and creamy. Alternatively, you can cook on high for 1 to 1.5 hours.

            Optional Topping: If you like a crispy topping, mix the breadcrumbs with a little melted butter and sprinkle over the top of the mac and cheese. Cover and cook for an additional 15-20 minutes until the topping is golden brown.

              Serve: Once done, stir the mac and cheese to combine all ingredients again. Serve hot, garnished with additional crumbled bacon if desired.
