Growing up, Sundays often revolved around shared meals, and one dish that always took center stage was my mom's famous potato hash. The perfect combination of savory ground beef, tender potatoes, and vibrant vegetables made it a staple at our dinner table. Today, I’m excited to share a slow cooker version of this classic dish that not only simplifies your meal preparation but also brings back those comforting memories.

Slow Cooker Ground Beef and Potato Hash

Ingredients
  

1 lb ground beef (85% lean)

3 large russet potatoes, peeled and diced

1 large onion, chopped

1 red bell pepper, diced

2 cloves garlic, minced

1 cup frozen mixed vegetables (peas, carrots, corn)

1 teaspoon kosher salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon cayenne pepper (optional)

1 tablespoon Worcestershire sauce

1 cup beef broth

1 cup shredded cheddar cheese (for topping, optional)

Fresh parsley or chives for garnish (optional)

Instructions
 

Brown the Beef: In a skillet over medium heat, brown the ground beef until fully cooked, breaking it apart with a wooden spoon. Drain excess fat and set aside.

    Prepare the Slow Cooker: In a slow cooker, add the diced potatoes, chopped onion, and diced red bell pepper. Mix them well.

      Combine Ingredients: Add the browned ground beef, minced garlic, frozen mixed vegetables, salt, black pepper, smoked paprika, oregano, cayenne pepper (if using), Worcestershire sauce, and beef broth to the slow cooker. Stir to evenly combine all the ingredients.

        Cook on Low: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.

          Serve: Once cooked, gently stir the hash before serving. If desired, sprinkle shredded cheddar cheese on top and let it melt before serving.

            Garnish: Finish with fresh parsley or chives for a pop of color and freshness.
