Ingredients

1 pound (450g) fresh mushrooms, sliced (such as cremini or button)

1 medium onion, diced

3 cloves garlic, minced

1 cup vegetable broth

1 tablespoon soy sauce or Tamari for gluten-free option

1 teaspoon Worcestershire sauce

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

1 cup sour cream or Greek yogurt (or a dairy-free alternative)

2 tablespoons cornstarch (optional, for thickening)

Fresh parsley, chopped for garnish

12 ounces (340g) wide egg noodles or gluten-free pasta

Instructions

Prepare the Base: In the slow cooker, combine the sliced mushrooms, diced onion, and minced garlic. Stir in the vegetable broth, soy sauce, Worcestershire sauce, smoked paprika, dried thyme, and season with salt and pepper.

Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the mushrooms are tender and the flavors are melded together.

Thicken (Optional): If you prefer a thicker stroganoff, mix the cornstarch with a little cold water to make a slurry. About 30 minutes before serving, stir the slurry into the stroganoff and cook uncovered to allow it to thicken.

Finish the Sauce: Once the cooking time is up, reduce the heat to warm, and stir in the sour cream (or Greek yogurt) until smooth. Adjust seasoning with additional salt and pepper if needed.

Cook the Noodles: While the stroganoff is finishing, cook the egg noodles according to package instructions. Drain and toss with a bit of olive oil to prevent sticking.

Serve: On a plate, layer the cooked egg noodles, then generously spoon the creamy mushroom stroganoff over the top. Garnish with fresh chopped parsley for a pop of color and added freshness.

Enjoy: Dig in and savor this rich and flavorful dish that’s sure to warm your soul!
