Slow Cooker Black Bean Soup

2 cups dried black beans, rinsed and sorted

1 medium onion, diced

3 cloves garlic, minced

1 medium carrot, diced

1 bell pepper (any color), diced

2 stalks celery, diced

1 can (14.5 oz) diced tomatoes with green chiles

4 cups vegetable broth (or chicken broth)

2 teaspoons ground cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice level)

Salt and pepper to taste

2 tablespoons olive oil

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Avocado slices (for topping, optional)

Sour cream or Greek yogurt (for topping, optional)

Instructions
 

Prepare the Beans: If you have time, soak the black beans in water overnight to reduce cooking time. If not, rinse and sort them just before use.

    Sauté the Vegetables: In a skillet, heat olive oil over medium heat. Add onions, garlic, carrot, bell pepper, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened and fragrant.

      Combine Ingredients in Slow Cooker: Transfer the sautéed vegetables to the slow cooker. Add the rinsed black beans, diced tomatoes (with juices), vegetable broth, ground cumin, smoked paprika, cayenne pepper, salt, and pepper. Stir well to combine all the ingredients.

        Cook the Soup: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beans are tender and the soup has thickened.

          Blend for Creaminess (Optional): If you prefer a creamier soup, use an immersion blender to blend a portion of the soup directly in the slow cooker until desired consistency is reached. Alternatively, you can blend half the soup in a regular blender and then return it to the slow cooker.

            Add Lime Juice: Once cooked, stir in lime juice and adjust seasoning with additional salt and pepper, if needed.
