Slow Cooker Balsamic Chili

Ingredients
  

1 lb ground beef (or plant-based substitute)

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) crushed tomatoes

1 cup vegetable broth (or beef broth)

1/2 cup balsamic vinegar

2 tablespoons brown sugar

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon crushed red pepper (adjust to taste)

Salt and black pepper to taste

1 cup corn (frozen or fresh)

Optional toppings: chopped cilantro, shredded cheese, sour cream, avocado

Instructions
 

Brown the Meat: In a skillet over medium heat, brown the ground beef (or plant-based substitute) until fully cooked. Drain excess fat and set aside. This step adds depth of flavor to your chili.

    Prep the Vegetables: In the same skillet, add a splash of olive oil if needed, then sauté the diced onion, bell pepper, and garlic until the onion is translucent, about 4-5 minutes.

      Combine Ingredients: In your slow cooker, combine the browned meat, sautéed vegetables, black beans, kidney beans, crushed tomatoes, vegetable broth, balsamic vinegar, brown sugar, chili powder, cumin, smoked paprika, and crushed red pepper. Season with salt and black pepper to taste.

        Slow Cook: Stir everything together until well mixed. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until flavors meld and the chili is thick and hearty.

          Add Corn: About 30 minutes before serving, add the corn to the chili. Stir well and let it cook for the remaining time.

            Serve: Once done, taste and adjust seasoning if necessary. Serve hot with your choice of optional toppings such as chopped cilantro, shredded cheese, sour cream, and slices of avocado.
