Slow Cooked Cheesy Chili Mac

1 lb ground beef (or turkey for a lighter option)

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 (15 oz) can kidney beans, drained and rinsed

1 (15 oz) can black beans, drained and rinsed

1 (28 oz) can diced tomatoes (with juice)

2 cups beef or vegetable broth

2 tbsp tomato paste

2 tbsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

½ tsp salt

½ tsp black pepper

1 lb elbow macaroni

2 cups shredded cheddar cheese

1 cup shredded mozzarella cheese

¼ cup chopped fresh cilantro (optional, for garnish)

¼ cup sliced green onions (optional, for garnish)

Sour cream (optional, for serving)

Instructions
 

Brown the Meat: In a large skillet over medium heat, add the ground beef (or turkey). Cook until browned, breaking it apart with a spatula. Drain any excess fat.

    Sauté Vegetables: To the skillet, add the chopped onion, garlic, and bell pepper. Sauté for about 5 minutes until the vegetables are softened.

      Combine Ingredients: In a large slow cooker, combine the browned meat and sautéed vegetables. Stir in the kidney beans, black beans, diced tomatoes (with juice), beef or vegetable broth, tomato paste, chili powder, cumin, smoked paprika, salt, and pepper.

        Cook: Cover the slow cooker and cook on low for 4 hours.

          Add Macaroni: After 4 hours, stir in the elbow macaroni. Cover and continue to cook on low for an additional 30 minutes, or until the pasta is tender. If needed, you can add a little more broth to keep it from being too thick.

            Cheesy Finish: Once the macaroni is soft, stir in both the cheddar cheese and mozzarella cheese until melted and creamy.

              Serve: Spoon the cheesy chili mac into bowls and garnish with chopped cilantro and green onions if desired. Add a dollop of sour cream on top for extra creaminess.
