8 oz elbow macaroni

4 oz bacon, chopped

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 teaspoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

½ teaspoon smoked paprika (optional)

Fresh parsley for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Cook the Bacon: In a large skillet over medium heat, add chopped bacon. Cook until crispy, about 5-7 minutes. Use a slotted spoon to transfer bacon to a paper towel-lined plate, leaving the rendered fat in the skillet.

      Make the Cheese Sauce: In the same skillet with bacon fat, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute, stirring constantly to make a roux. Gradually add the milk, stirring to avoid lumps. Continue cooking and whisking until the mixture thickens, about 3-4 minutes.

        Add Seasonings: Stir in the Dijon mustard, garlic powder, onion powder, smoked paprika (if using), salt, and pepper.

          Combine Cheeses: Remove the skillet from heat and stir in the shredded cheddar and mozzarella cheese until melted and smooth.

            Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce, stirring well until all pasta is coated. If the mixture is too thick, add a splash of milk to reach desired creaminess.
