Skillet Beef and Spinach Quesadillas with Cheese

1 lb ground beef

2 cups fresh spinach, chopped

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

4 large flour tortillas

2 cups shredded cheese (cheddar, Monterey Jack, or a blend)

2 tablespoons olive oil (divided)

Salsa and sour cream for serving

Instructions
 

Cook the Beef: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.

    Brown the Meat: Add the ground beef to the skillet. Season with cumin, chili powder, salt, and pepper. Cook until the beef is well browned and cooked through, about 6-8 minutes. Drain any excess fat if necessary.

      Add Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Remove the beef and spinach mixture from the skillet and set aside.

        Prepare the Quesadillas: In the same skillet, add another tablespoon of olive oil. Place one tortilla in the skillet and sprinkle about ½ cup of cheese evenly over the tortilla.

          Layer the Filling: Spoon a generous portion of the beef and spinach mixture on top of the cheese, then sprinkle another ½ cup of cheese over the filling. Top with a second tortilla.

            Cook the Quesadilla: Cook for about 3-4 minutes on medium heat until the bottom is golden and crispy. Carefully flip the quesadilla over and cook for another 3-4 minutes on the other side or until both sides are golden brown and the cheese is melted.

              Repeat: Remove the quesadilla from the skillet and place it on a cutting board. Repeat the process with the remaining tortillas and filling until all food is used.

                Serve: Cut each quesadilla into wedges and serve warm with your favorite salsa and sour cream on the side.
