Ingredients

1 lb ground beef (80% lean)

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper, to taste

8 small taco-sized corn or flour tortillas

1 cup shredded lettuce

1 cup shredded cheddar cheese

1 medium tomato, diced

1 ripe avocado, diced

Fresh cilantro, for garnish

Lime wedges, for serving

Fresh Salsa Ingredients:

2 medium tomatoes, diced

1/2 red onion, finely chopped

1 jalapeño, finely chopped (seeded for milder heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Instructions

Prepare the Fresh Salsa:

    - In a medium bowl, combine the diced tomatoes, red onion, jalapeño, and cilantro.

      - Squeeze in the lime juice and add a pinch of salt. Stir gently to combine. Taste and adjust seasoning, then set aside to let the flavors meld.

        Cook the Beef:

          - In a large skillet over medium heat, add the chopped onions and cook until they become translucent, about 3-4 minutes.

            - Add the minced garlic and cook for an additional 1 minute until fragrant.

              - Increase the heat to medium-high and add the ground beef to the skillet. Use a spatula to break it up.

                - Sprinkle in the chili powder, cumin, paprika, salt, and pepper. Cook until the beef is browned and fully cooked through, about 6-8 minutes. Drain any excess fat if necessary.

                  Warm the Tortillas:

                    - In a separate skillet (or directly over the flame on a gas stove), warm the tortillas over medium heat for 30 seconds on each side or until pliable.

                      Assemble the Tacos:

                        - Take a warm tortilla and layer 2-3 tablespoons of the seasoned beef in the center.

                          - Top with shredded lettuce, a generous sprinkle of cheddar cheese, diced tomatoes, and avocado.

                            - Spoon a spoonful of fresh salsa over the top and garnish with fresh cilantro.

                              - Serve immediately with lime wedges on the side for squeezing over the tacos.
