Ingredients

2 cups cooked chicken, shredded

1/2 cup barbecue sauce (your favorite brand)

4 store-bought flatbreads or pita breads

1 cup shredded mozzarella cheese

1/2 cup red onions, thinly sliced

1/2 cup corn kernels (canned or frozen)

1/4 cup fresh cilantro, chopped (for garnish)

1 teaspoon olive oil

Salt and pepper to taste

Optional: 1 jalapeño, sliced (for a spicy kick)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare Chicken Mixture: In a medium bowl, combine the shredded chicken and barbecue sauce. Mix well until the chicken is evenly coated.

Assemble Flatbreads: Place the flatbreads on a baking sheet lined with parchment paper. Brush each flatbread lightly with olive oil to enhance crispiness.

        Layer the Ingredients:

          - Evenly distribute the BBQ chicken mixture over each flatbread.

            - Sprinkle the shredded mozzarella cheese on top of the chicken mixture.

              - Add a layer of thinly sliced red onions and corn kernels for added flavor and texture.

                - If using, add slices of jalapeño for a spicy kick.

Bake the Flatbreads: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the cheese is bubbling and the edges of the flatbreads are golden brown.

Garnish and Serve: Once out of the oven, let the flatbreads cool slightly. Sprinkle chopped cilantro over the top for freshness. Slice into triangles and serve warm.
