Shrimp Tacos with Lime Slaw

For the shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper, to taste

Juice of 1 lime

For the lime slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 large carrot, grated

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons honey or agave syrup

1 tablespoon apple cider vinegar

Salt and pepper, to taste

For assembly:

8 small corn or flour tortillas

Sliced avocado (optional)

Lime wedges (for serving)

Extra cilantro for garnish

Marinate the Shrimp: In a medium bowl, combine the olive oil, chili powder, cumin, garlic powder, paprika, lime juice, salt, and pepper. Add the shrimp and toss to coat evenly. Allow the shrimp to marinate for 15-20 minutes.

    Prepare the Lime Slaw: In a large mixing bowl, combine the shredded green cabbage, red cabbage, grated carrot, and chopped cilantro. In a separate small bowl, whisk together the lime juice, honey (or agave syrup), apple cider vinegar, salt, and pepper. Pour the dressing over the cabbage mixture and toss until well combined. Set aside to let the flavors meld.

      Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for 2-3 minutes on one side, then flip and cook for an additional 2-3 minutes until the shrimp are pink and opaque. Remove from heat.

        Warm the Tortillas: In the same skillet (or microwave), warm the tortillas for about 30 seconds on each side or until soft and pliable.

          Assemble the Tacos: Layer a generous amount of lime slaw onto each warmed tortilla, followed by a portion of the cooked shrimp. Top with sliced avocado if desired and garnish with additional cilantro.
