1 cup all-purpose flour

1/2 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup granulated sugar

1/2 cup packed brown sugar

2 large eggs

1 cup pure pumpkin puree (canned or freshly roasted)

1/2 cup vegetable oil

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips (optional, for a sweet twist)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups lightly with cooking spray.

    Combine Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt until thoroughly combined.

      Mix Sugars and Wet Ingredients: In another bowl, whisk together the granulated sugar, brown sugar, and eggs until well combined. Then add the pumpkin puree, vegetable oil, and vanilla extract, mixing until smooth.

        Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring with a spatula just until the flour is incorporated. Be careful not to overmix. If desired, fold in the chopped nuts and chocolate chips at this stage.

          Fill Muffin Cups: Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full. For an added touch, you can sprinkle a pinch of cinnamon sugar on top of each muffin for extra flavor and a sweet crust.

            Bake the Muffins: Bake in the preheated oven for about 18-20 minutes, or until a toothpick inserted into the center comes out clean.

              Cool and Store: Once done, remove the muffins from the oven and allow them to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. They can be stored in an airtight container for up to 5 days, or individually wrapped and frozen for later use.

                Pack Them Up: Once cooled, pack the muffins into a snack box along with some fresh fruit slices (like apple or pear wedges) and a small portion of nut butter or yogurt for dipping.
