4 large bell peppers (any color)

1 lb ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa (or rice)

1 medium onion, diced

2 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 tsp Italian seasoning

1 tsp smoked paprika

½ tsp salt

¼ tsp black pepper

1 cup shredded mozzarella cheese (plus extra for topping)

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Peppers: Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.

    Cook the Turkey: In a large skillet, heat olive oil over medium heat. Add diced onions and garlic, sautéing until softened (about 3-4 minutes).

      Add Turkey and Seasonings: Add ground turkey to the skillet. Cook until browned, breaking it apart with a spatula. Season with Italian seasoning, smoked paprika, salt, and black pepper.

        Incorporate Spinach and Quinoa: Stir in chopped spinach and cook until wilted (about 2 minutes). Mix in the cooked quinoa, and diced tomatoes. Cook for an additional 2-3 minutes until heated through.

          Fill the Peppers: Remove the skillet from heat and stir in 1 cup of cheese, mixing until melted and combined. Spoon the turkey mixture into each prepared bell pepper, packing it gently but firmly.

            Top with Cheese: Sprinkle extra mozzarella cheese over the top of each stuffed pepper.

              Bake: Pour a small amount of water into the bottom of the baking dish (about ¼ cup) to help steam the peppers. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the peppers are tender and the cheese is bubbly and golden.

                Serve and Garnish: Once done, remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
