2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

2 tablespoons olive oil

3/4 cup warm water

1 cup cherry tomatoes, halved

1 cup fresh basil leaves, torn

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 cup shredded mozzarella cheese

Freshly cracked black pepper, to taste

Balsamic glaze, for drizzling (optional)

Instructions
 

Prepare the dough: In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until well blended.

    Mix in the wet ingredients: Add olive oil and warm water to the dry ingredients. Stir with a spoon until the dough starts to come together. Knead the dough on a lightly floured surface for about 5 minutes, or until smooth and elastic.

      Rest the dough: Cover the kneaded dough with a clean kitchen towel and let it rest for about 30 minutes.

        Preheat the oven: Preheat your oven to 475°F (245°C) and place a baking sheet or pizza stone inside to heat.

          Prepare the toppings: While the dough rests, toss the halved cherry tomatoes, torn basil leaves, garlic powder, onion powder, and freshly cracked black pepper together in a bowl. Set aside.

            Shape the flatbread: Once the dough has rested, divide it into two equal portions. Roll each portion into a round or oval flatbread shape, about 1/4 inch thick. If the dough resists, let it rest for a few more minutes before rolling.

              Add toppings: Carefully remove the hot baking sheet or pizza stone from the oven. Place the rolled flatbreads onto it. Evenly sprinkle shredded mozzarella cheese over each flatbread, then layer the tomato and basil mixture on top.

                Bake: Place the flatbreads in the preheated oven and bake for 10-12 minutes, or until the edges are golden and the cheese is melted and bubbly.

                  Finish and serve: Remove the flatbreads from the oven and let them cool for a minute. Drizzle with balsamic glaze if desired. Slice and serve warm.
