1 lb (450g) potato gnocchi (store-bought or homemade)

1/2 cup sun-dried tomatoes in oil, drained and chopped

1/2 cup grated Parmesan cheese

1/4 cup fresh basil, chopped

3 cloves garlic, minced

1/4 cup olive oil

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Cook Gnocchi: In a large pot of boiling salted water, add the gnocchi. Once they float to the surface (about 2-3 minutes), use a slotted spoon to remove them and transfer to a bowl. Reserve some pasta water (about 1/2 cup).

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add minced garlic and red pepper flakes (if using), sautéing for about 1 minute until fragrant.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for an additional 2-3 minutes, allowing their flavors to meld with the garlic.

        Combine Gnocchi: Add the cooked gnocchi to the skillet, tossing gently to coat them in the oil and tomato mixture. If the mixture seems dry, gradually add some of the reserved pasta water until you reach the desired texture.
