Savory Spinach and Cheese Stuffed Shells

20 large conchiglie pasta shells

2 cups ricotta cheese

1 cup shredded mozzarella cheese

1 cup grated Parmesan cheese

2 cups fresh spinach, chopped

1 clove garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 cups marinara sauce (store-bought or homemade)

Fresh basil, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the conchiglie pasta shells and cook according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.

      Prepare the Filling: In a large mixing bowl, combine the ricotta cheese, 3/4 cup of the mozzarella cheese, half of the Parmesan cheese, chopped spinach, minced garlic, dried Italian herbs, red pepper flakes (if using), and season with salt and pepper. Mix until well combined.

        Stuff the Shells: Take each cooked pasta shell and fill it generously with the spinach and cheese filling. Place the stuffed shells opening side up in a greased 9x13 inch baking dish.

          Add Marinara Sauce: Pour the marinara sauce evenly over the stuffed shells, making sure to cover them well. Sprinkle the remaining mozzarella and Parmesan cheeses on top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil before serving.
