1 lb (450g) breakfast sausage (pork or turkey)

2 cups fresh spinach, roughly chopped

1 medium onion, diced

1 bell pepper (red, yellow, or green), diced

3 large eggs

1 cup baby potatoes, diced (or hash browns)

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

1 tablespoon olive oil

1/4 cup shredded cheddar cheese (optional)

Fresh herbs (such as parsley or chives) for garnish

Prepare the Potatoes: If using baby potatoes, place them in a pot of salted water and bring to a boil. Cook for about 8-10 minutes or until just tender. Drain and set aside.

    Cook the Sausage: In a large, non-stick skillet over medium heat, add the breakfast sausage. Break it up with a spatula and cook until browned and fully cooked, about 5-7 minutes. If excess fat renders, you can drain some, but keep enough to sauté the vegetables.

      Sauté the Vegetables: Add the onion and bell pepper to the skillet with the sausage. Cook for about 4-5 minutes, stirring occasionally, until the vegetables are softened. Add the minced garlic and sauté for another minute until fragrant.

        Add Potatoes and Spinach: Stir in the cooked potatoes, smoked paprika, black pepper, and salt. Cook for another 3-4 minutes, allowing the potatoes to get slightly crispy. Finally, add the spinach and stir until just wilted, about 1-2 minutes.

          Make Space for Eggs: Make three small wells in the mixture and crack one egg into each well. Cover the skillet with a lid and let the eggs cook for about 5-7 minutes, or until the egg whites are set but the yolks are still runny. Cook longer if you prefer firm yolks.
