Savory Egg Muffins Spinach Cheese

6 large eggs

1 cup fresh spinach, chopped

1/2 cup cherry tomatoes, halved

1 cup shredded cheese (cheddar, feta, or mozzarella)

1/4 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or olive oil for greasing muffin tin

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 12-cup muffin pan with cooking spray or a light coat of olive oil to prevent sticking.

    Prepare Vegetables: In a mixing bowl, combine the chopped spinach and halved cherry tomatoes. Toss gently to mix. Set aside.

      Whisk the Eggs: In a large bowl, crack the eggs and whisk them together until fully blended. Add milk, garlic powder, onion powder, salt, and black pepper. Whisk until the mixture is light and fluffy.

        Combine Ingredients: Fold the chopped spinach and cherry tomatoes into the egg mixture. Then, gently stir in the shredded cheese, ensuring it’s evenly distributed.

          Fill Muffin Cups: Pour the egg mixture evenly into each muffin cup, filling them about 3/4 full (leave room for the muffins to rise).

            Bake: Place the muffin pan in the preheated oven and bake for 20-25 minutes or until the muffins are set and lightly golden on top.

              Cool and Serve: Once baked, remove the muffins from the oven and let them cool in the pan for 5 minutes. Carefully remove the muffins from the pan and place them on a wire rack. Serve warm or at room temperature.
