4 medium-sized russet potatoes, peeled and diced

1 medium yellow onion, chopped

3 cloves garlic, minced

3 cups vegetable broth

1 cup whole milk

1 cup sharp cheddar cheese, shredded (plus extra for garnish)

1/2 cup sour cream

1/4 cup unsalted butter

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

4 slices of crispy bacon, crumbled (optional, for garnish)

Chopped green onions, for garnish

Instructions
 

Sauté the Aromatics: In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, cooking until the onion becomes translucent, about 5 minutes.

    Cook the Potatoes: Stir in the diced potatoes, thyme, and smoked paprika. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 15-20 minutes, or until the potatoes are fork-tender.

      Blend Until Smooth: Once the potatoes are cooked, carefully use an immersion blender to puree the soup until smooth and creamy. If you prefer a chunkier texture, blend only half the soup and leave some potato chunks.
