1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup broccoli florets

1 medium carrot, julienned

3 cloves garlic, minced

1-inch piece ginger, grated

2 green onions, chopped

1 tablespoon sesame oil

Salt and pepper to taste

Cooked jasmine rice or noodles for serving (for a complete meal)

Instructions
 

Marinate the Beef: In a bowl, combine the sliced beef, soy sauce, oyster sauce, and cornstarch. Mix well to coat the beef evenly and let it marinate for about 10 minutes.

    Prep the Vegetables: While the beef is marinating, wash and prepare the vegetables. Slice the bell peppers, julienne the carrot, and separate the broccoli into florets.

      Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat until shimmering.

        Cook the Beef: Add the marinated beef to the hot skillet in a single layer. Let it sear without stirring for about 1-2 minutes, then stir-fry for an additional 2-3 minutes until browned and cooked through. Remove the beef from the pan and set aside.

          Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, stirring quickly for about 30 seconds until fragrant. Then, add the bell peppers, broccoli, and carrot. Stir-fry the vegetables for about 5-6 minutes until they are tender-crisp.

            Combine Ingredients: Return the cooked beef to the skillet with the vegetables. Drizzle the sesame oil over the mixture, stirring to combine everything evenly. Cook for an additional 1-2 minutes to heat through. Season with salt and pepper to taste.
